Okay, so I agree with you but I supplied the tire so I take some responsibility.
I did manage to pump the tire up by using the silca pipe and taking it apart and slipping each piece on gently. A great solution no, but it did work as instructed by the shop.

In anycase the options are
a) Grind some wall out, The opening is 40mm, the CLOSED stem is 35mm. I figure I need 5-10mm to fit it in without a hassle, most likely closer to 10mm.
b) Pull tire and replace with another using a shorter stem. Unsure which one as I race mostly on Asphalt & concrete Kissena & Trexlertown, Rock hill for Masters, Nothing indoors

Stuff happens and the tire will be used by me on my 404's when I need them replaced.

Yup, the Vittorias have long valves. There's nothing you can do but use a different tire. The mechanic could/should have noticed this during the tire stretching process (before gluing).

The only solution is to pull that tire and use it for something else and get a new tire for your disc.
