One suggestion I would make is to look for an original Sentinel Whisper. They don't go for much money, and they came with a complete Shimano 600 / Tourney group, including hubs and bar-end shifters.
Edit: The cranks are actually Takagi, but still follow the Tourney theme. If you find a Whisper GT, it should come with a 600 long cage RD.
