Yep, extended threshold intervals (can be 10min L4 w/ 5min L3 in between) and mix in low cadence sessions, too.

Get a fat bike, find a beach, ride into the wind on 4 psi tires in sand. The beach I ride has frequent winter and summer headwinds of 15 mph and the combo of soft sand, low tire psi...means miles (up to 20 miles one way) of grinding or spinning at any pace you want. Winds of 20 mph and soft sands can slow me to 4-5 mph which provides a mental test as well.

A buddy (who I occasionally ride with) rode as a domestique in Europe and his take on beach fatback riding (or snow) is that it's heck of winter training tool for roadies. I run a 22 front with 11-32 outback. Pretty brutal spinning up above 16 mph! The real tough conditions are like climbing 4-6% hills..for miles with late summer sugar sand total cardio zone. We had 45 fatbikers on the beach late September and only a few went maybe 1/4 mile in the worst sugar sand. I do mile long interval sprints and even in the best of conditions (harder wet sand), keeping them under 4 minutes is a challenge as I'm attempting to stay steady at +105 cadence...ugh.
