I'd like a ride that isn't quite as harsh, while still being incredibly responsive. I'd also like a lighter bike overall.
If I were to buy new wheels, how much of a difference would I actually experience day to day? I am not a racer, but rather a recreational rider who rides 2-3x/week for 30-40 miles.

New wheels can save you a fair amount of weight and a lighter bike overall feels more responsive but it won't be any less harsh.
