What's the best way to locate events, is there any particular resources I should be using for things like training and nutrition? I don't have a velodrome near me but I'd really like to get into fixed racing and I feel like this is the best way to do it.

If you don't have one already, getting a road bike will facilitate putting on bigger miles and training in a more controlled fashion. There is no substitute for specificity of course so you will need to practice cornering/slowing/accelerating on the FG, but a road bike would make training your fitness more controlled and amenable. In regards to training - any program that is suited towards regular criterium racing should work, with a balance of endurance rides and shorter interval rides.
I have no experience racing FG crits but I am an experienced (and active) category 2 road and track racer. I'm happy to help however I can. Admittedly I'm a bit ambivalent/scared to try a FG crit! I would consider it if it was USAC as Lazyass suggested as IME having separate categories generally makes things safer and separates based on ability. I feel at home in a P/1/2 crit but a combined crit field (esp fixed) scares the **** out of me.

Reach out to your local bike shops and ask them about any races or leagues or bike groups/clubs in or around your area.
