…and “how” did you get the pedals to thread? Take them apart and swap out the pedal axles?

Why not? I've always wanted to do it for the sake of novelty, and a solution just kind of came together to do it easily.
The hub is a White Industries Eno eccentric hub that uses a splined cog. I actually hated that I had to buy new proprietary cogs, but it just so happens that if you want to run left side drive, you don't need to worry about which direction it threaded on because it doesn't. The crankset, is a tandem crankset for a captain. I came across a good deal on it and with the eno wheelset already on the bike, it clicked that I could do a proper left side drive conversion pretty easily.

Brilliant! I didn’t think of the tandem crank option. Even without the splined cog I’d think a standard track/fixie set up could be used in reverse quite easily with its reverse thread (LH) locking flange. Rear wheel braking with those is all in reverse without issue so not all that different.

Back to drops, bike fits much better this way.
Also the porteur bar/stem combo made putting the front bag on incredibly difficult which forced the switch to drops. For a bike that I typically just cruise around on having a bag like that makes the bike incredibly useful. Fits a 6 pack of cans perfectly, and handling doesn't get weird

Yeah this was part (bottom?) of Planet X's Holdsworth(and I think they acquired some other heritage-ish brand names too) retro-steel experiment 8-10 years ago. Its a shame they gave up on that business.

Updated the big block again: new additions are SimWorks bar + seatpost (and matching spacers), Izumi Super Toughness KAI, Phil cog + chainring.
