Looping Lake Simcoe - any advice?

A few friends and I are planning on circling Lake Simcoe this summer. We'll do it in two days, staying at a buddy's mom's house for the night. We did the Niagara circle route last year - this is year 2.
I've never ridden in this part of the province.. any advice for relatively novice, middle aged, road riders??
