'Custom assembly' for components if you already have the frame/fork or are doing a complete change of components on the bike.
'Components swap' if you already own the bike but want to change some bits.
Those are the terms I use. But that means nothing as there is no common understanding of 'custom build', IMHO.
Question:
Why do we admonish people (attack newbies) for punctuation, grammer, spelling? Then smear their character.

Too many jerks! Who have nothing positive to add to a thread. But have a high opinion of their irrelevant opinions. Sheesh, on an international discussion forum about bicycles, some worry over apostrophes. Please, come down from the perfect World you live in, we are just cyclists asking questions.

I miss TrekMogul and his big purchases of expensive equipment. He certainly supports the industry with his wallet instead of just his comments.
He probably got tired of the attacks and snarky posts from jealous members because he could (seemingly) afford anything he wanted.

Co-Motion, Calfee, Tallerico, Macalu. And a dozen or so European vintage frames, assembled by myself.
Modifications to standard geometry for captain with multiple sized stokers
Relaxed headtube angle off the standard geometry - custom assembly from the builder (on the initial iiteration). Two subsequent rebuilds.
Fully custom frameset from Columbus steel - lugged.
American made frame - both tubes & welder. However, not a custom frame.
That's how we support the Made in America part of the industry. And reap the other benefits.

I want a vibrant US cycling scene with small frame builders and component manufacturers. I do not want a bicycle like everyone else rides. Not because mine are inherently better, but they reflect my preferences when pedaling. Oh yeah, with custom paint. I'm sure your Trek/Spec/Giant pleases you as much.

Never owned a Trek, or a Specialized, or a Giant. Have yet to see another bike exactly like mine. But thanks for playing.

Sent it back. A major discussion ensued. Finally he got the frame. And said he did not like the way it rode.
I know a lot about bikes, cars, planes etc. However when I ordered my "last bike" from Mark Dinucci, there was NO discussion of tube lengths, angles, etc.
None. Just a set of measurements from 3 of my existing bikes, and my height and weight.
the result is the best riding bike I've ever owned, ever.
So sometimes it pays to let a master do his work and like a work of fine art, enjoy the result.

many high end frame makers do not get into tube details, instead choosing to build what works for you
my experience worked like this
start I sent email with what i was thinking including threaded steerer then
1) detail bike measurements 2) detail me measurements (need a friend to help) 3) fill in 20 or so questions, some not what you would think
4) talk to builder about options and thinks like disc or caliper, braze ons, tire size (can go bigger with fillet brazed vs lug)
5) builder sent a design with note about which model he recommends and details like "made top tube touch shorter and go for 110 stem for better downhill stability"
6) Another quick talk
7) build the frame
for reference this was dave kirk Kirk Frameworks | Custom Bicycles
a bit to my surprise he suggested for me a "racier" model from his list of models Models and Accessories | Kirk Frameworks
as to tubes The original JKS is built with oversized main tubes, Kirk by Reynolds stays and blades, and lugs by Llewellyn of Australia and The JK Special bikes are built with a proprietary mix of tubes (chainstays, seat stays, and fork blades) made to my specifications by Reynolds of England as well as Reynolds 953 and 853
as to cost a frame like this is less than say a Specialized tarmac frame

And a tool set? May as well use a Craftsman beam torque wrench. What ever happened to a custom tool set mix -- Hozan, DT Swiss, Abbey, Wera, etc?
