Help with disc brakes
Can someone explain how to center a brake rotors (thru axle wheel) when the wheel goes on? I just got a new bike, and can't seem to get it so the rotor won't rub the caliper.

The thru axle should dependably put the wheel in the same position relative to the caliper and all else on the frame. Install the wheel, then adjust the caliper and all should be the same going forward. Check that your rotor is true.

For hydraulic brakes, put the wheel in place, loosen the two bolts holding the caliper in place just enough so the caliper moves, pull the brake lever hold it in place and tighten the caliper bolts. The caliper should apply equal travel to both pads once the lever is released the pads retract on both sides of the rotor. If this doesn't work apply the lever and watch the pads to make sure they both move .
Cable disc are different depending what type some one side moves some both. Cable take more effort to center but the process is similar.

What wsteve464 wrote. And if these are mechanical disc brakes, you may have to also adjust the pad position (on one side) by turning a hex bolt a bit. See the calipers’ instruction manual online.
