Brakes

Watched a Youtube video of a guy slowly ascending a mountain near and around death valley on a fat bike.(can't post links yet since I don't have 10 posts) He was loaded down with lots of survival gear, etc. Do bikes have problems with brakes going downhill like cars and trucks do? If you're riding up the side of a mountain for three or four days, do your brakes overheat if you're coming down the other side for four or five hours straight riding on them? I mean, not just with a rider, but with a load on it like this bike I was watching. I know they have rides in Abingdon, VA where you could go up on top of Whitetop mountain on a truck, and they drop you off with a bike to ride back down on. Of course, I never saw the bikes they used for that or the brakes. Just wondering if problems like that arise or not, and if they do, what brakes are best for preventing failure during descent.
