Educate me about brakes

Hello, so I have a moderate understanding of bike frames and most parts of the Shimano drivetrain groupsets, but I still would like to know more about the different levels of disc brakes, the different brands that offer them, and what to and what not to look and what to stay away from. I would like to know overall, but particularly in the lower to mid range levels for flatbars especially.

All I've mostly found on brakes so far is explaining the basics of what the differences are between rim and disc brakes, mechanical and hydraulic etc. So I know all about that already.

If you want personal opinions:
Road Rim Brakes: Cane Creek eeBrakes, SwissStop pads and Jagwire Elite Link cables and housing.

Mechanical Disc Brakes: TRP Spyres, SwissStop pads, Jagwire Elite Link cables and housing and Shimano IceTech rotors

Hydraulic Disc Brakes: Shimano XT and IceTech rotors or for SS road stuff I would go TRP Hylex and still IceTech rotors.

Upgrading cables, housing, pads and rotors are a cheap way to get better performance out of brakes. TRP Spyres are pretty decent brakes for the price but upgrading pads/cables and such makes them even better.

Are your hands small or clinch lightly? Look for smaller grip designs with adjustability. You'll pay more but it's the cost of comfort.
I have the ability to sprawl my grip, making grip choices endless.
Plan on riding in extreme conditions all year?
Mechanical disc is my suggestion.
