Rochester, MN
I am heading to Rochester, MN in a couple months and am having a difficult time locating any maps with bike routes/paths. I will have a couple half days that I can ride 30-40 miles each day. Anyone familiar please chime in. Thanks.

However, if you wanted to bike greater MN, please don't rely on the 2013 MN bike map (you can get free from Home : Explore Minnesota Tourism ) because it's fairly inaccurate.

I've never ridden that far south, but if you don't mind driving north a little ways you could do this loop:
Bike Ride Profile | 35 miles near Red Wing | Times and Records | Strava
It's not a bike path/trail, but it's a pretty good ride with some hills thrown in the mix. You could start/end in Lake City to reduce the drive time... in fact you could just do an out and back on County Rd 5 and leave the hwy 61 segment off. The County Rd doesn't have shoulders, but it is lightly traveled. You could also turn right on Country Rd 2 and take that back to Frontenac and go up Hwy 61 back to Lake City to shorten the ride up.
Looking at google maps of the Rochester area I'm sure there some good country roads with some nice climbs around there too...
