Ever get shark bit (same effect) by leaning on your bike? It's when the chainring gouges the back of your leg as the bike slips away under your weight. It's like the rat trap. Ouch.

I have a nice curved scar on my right calf from my mtn bike chainring that I acquired during an unplanned dismount a couple of years ago.
I guess I've been shark bit.

So what is it called when the pedal goes backward and hits the shin and draws blood?

I was wondering what you were talking about. We always referred to these Pletscher racks as rat traps:

If you mean toe clips, and if you mean that the toe clip strap caused the accident, you might consider leaving the straps loose or even removing them.
I use clipless on most of my bikes, but I got rid of the straps on my bikes with toe clips 20 years ago. I like having the security of the toe clip, but I don't miss the straps at all, and it's nice being able to slide my feet out to the side as well as backward.

I suppose different regions of the country (or world) has idioms or words that have different meanings.
See Sheldon Browns description of "toe-clippable pedals" - Bicycle Pedals -- types, installation, Maintenance..
Could be I'm stuck in the 1980's???? And yes, I am replacing those "rat-trap" pedals for this summer and maybe forever with plain touring pedals. Touring pedals - both sides the same so either side can be used and no need to flip them. I have a set of MKS Sylvan double sided touring pedals on order. I definitely do not bounce as well as 30 years ago.

I call those mousetraps, because in the world of racks, I consider them "the better mousetrap."

To fully benefit from this thread you need to have experienced toe clips with shoe cleats.

When I was young, in my area, toe-clips were call toe-cages.

You wore the wrong shoes, not smooth sole enough, and maybe tightened the toe strap unnecessarily?
I've had My Birkenstock Clogs stay in the toe clip equipped pedal (BITD)
and put my grey wool boot stockinged foot down on the Wet street, at stop lights/signs.
