What color bar tape and brake housing goes with this
The frame color is gunmetal gray. The original brake housing was light grey. I'm thinking either light grey or black for tape and housing. Any suggestions?

I'd go with a darker color, so dirt/grime/grease doesn't show so much. A dark grey would be good, if available. Grey camo might look good for the bar tape, if you're not one who dislikes camo, or maybe solid dark grey if you don't like camo.

I worried about grime, dirt and simply aging making white bar tape ugly to quick and NOT worth the trouble. But white was the color that really went well with the rest of my '91 Paramount. To my surprise and to this day five years after putting it on, it still shows no dirt or grime.
So don't pay too much attention to the nay sayers. Use whatever color you want.
I used fizik for mine. So if you go back with something vintage like cotton bar tape then YMMV.

What color is the saddle? That generally factors into things, well, in matters of color coordination, that is.
White Fizik Performance tape (asymmetrical design/perforation) is a synthetic/leatherette (yet padded) tape that cleans easily, looks great, and is comfortable. I have one on order. White tape (and saddle) would really pop on that. Light grey housing would blend in well, too.

Might sound crazy, but I think red for cables and red cloth tape. I used to have a dark bike and back grey, white seemed a little monochromatic. The red wound up looking great.... to me.
