Shimano compatibility question

I have an older road bike with 8-speed Shimano Ultegra STI components (double chainring, short cage rear der). I'd like to set it up as a flat-bar city bike. My question is whether any 8-speed Shimano mountain bike shifter will work well with the 8-speed derailleur. Anyone have experience with this?

I believe it will work, I have heard of people running MTB rear derailleurs on road bikes to get the longer cage and run lower gearing.
