Touring destinations (tristate area)

So, I have the opportunity to ride a 5 day mini-tour, but I have no idea where to ride to. I live in Mahopac, New york, which is in the southern end of the Hudson River Valley. I am considering Albany as a destination, but it's not all about the destination and I'm pretty sure that the route to my destination will be the jewel of the trip.

I plan to stealth camp, putting up the tent as the sun falls and leaving camp before the sun rises.

The way I'm thinking now is,

south = nyc & NJ which are too urban
North = Upstate Ny, MA, VA, basically rural and beautiful states.
East = I don't know of too many interesting places over in CT for touring.
West = Possible, but again, no knowledge of destinations.

Can anyone suggest a good touring route or destination within 200 miles of the Hudson valley (Mahopac more specifically).

Do a loop of the Adirondacks. Duh

Adventure Cycling has a map set of the Adirondacks, it'll probably take you 5 days or so. It shouldn't be difficult for you to get up there.

Finger Lakes is also a good area.

Might be a little cold in the Adirondaks at this point in the season. (You didn't day when you plan to go.)

Might be cold in the Catskills as well, especially higher up in the hills. If you're camping, best check on how late the state DEC and Parks Dept. campsites are open, as some are closed already. I know you said "stealth camping" and I assume that implies stopping by the side of the road ?.

One thought I had was maybe head up thru Duchess to the new Rails-Trails bridge over the Hudson in Poughkeepsie, then loop west around the southern Catskills towards Binghamton, then north around the Catskills and back over the Hudson at Catskill or so and south again.

I plan to leave Friday morning and be back home by Tuesday night. I'm considering albany since I've never been there, and I'd love to see my state's capital. Have any of you ever camped out in a walmart parkinglot? I'm considering doing that for when I'm near albany since walmart allows campers and RVers to use the lot at night.
