I think I qualify for this category- I yearn for old-timey downtube shifters; square-taper BB's.... I reject Strava/Garmin/GPS/Power-meters/smartphones....... Screw electronic shifting; disc brakes; etc.

I really yearn for an old-fashioned typewriter! (But I know, I'd never use the darn thing....but I so miss the tactile experience; and no 'lectricity required!)
What I should do is trade this computer in for an abacus!
Any day now, the Amish are going to start pitying me!
Really though; we've lost so much by giving up the manual way of doing many things, and ceding those ways over to electronics. I'm not going to let that happen with my bikes! (And I still use an old Zassenhaus manual coffee grinder!)

A fountain pen is a great tool because it makes me slow down and think about what I want to say...much more deliberate...drawing is a different animal.
I still like to work with my hands (and from the forum response lots here do the same) as it gives me a feeling of challenge and accomplishment at the same time. I have Hi-tech stuff as well as low-tech stuff and get along with both...however I do like wrenching on the older stuff as I don't need a computer to do any analysis, wrench and screwdriver adequate etc.
My students are very adept with computers/milling machines etc. and are able to make some incredible things with them, in some ways I wonder what it would have been like if I were as facile...but in the end I can still draw what they make with my pen and it seems more intuitive I also hope their batteries last!
Tech is the way of the future so we adapt, were a part of it whether we like it or not....control what we can let the rest go.
I am glad to hear that you use that coffee grinder....can a get a dbl. dbl. decaf late with just a hint of cinnamon? oh and just a little foam on top.

True story: My youngest son got up in front of his kindergarden class for show-and-tell, and recited his powers of 2 up to 1024. His teacher stopped him after that or he'd have kept going. The rest of the class had just learned how to count to 10. That was, oh, 25 years ago.

My 1st grade grandson was using the computer in the school library when he realized he needed an upgraded version of Adobe to do what he wanted. No problem - he had typed in the librarians user name and was in the process of hacking her password when he got caught. He's real real smart but, I think, maybe too smart for his own good. It'll be interesting to see whether he turns out to be a gazillionaire or homeless. I could see it going either way.
