Pedal dust caps
I am increasingly adopting more and more sets of pedals without dust caps. Other than stealing them from other sets the cost of replacements is often far more than a new set of pedals entirely. Have you guys found any workarounds or DIY cover materials?

You can always make them yourself, if you have a lathe and several hours to kill!
Sometimes, though, you make mistakes and it all ends up being a waste of time...
Seriously though, if they are available at all, I'd just buy them. Life's too short to make buyable parts yourself.

What specific pedals need caps? Many, but not all, vintage pedals follow the Campagnolo standard and will interchange with each other, e.g. MKS Sylvan, Gipiemme Dual Sprint, Miche, Ofmega, Sakae Ringyo, Zeus, KKT Pro-Ace, Campagnolo Record and Gran Sport, and probably others can usually use each other's dustcaps. MKS Sylvan dustcaps are still readily available separately and affordably.

A long time ago I did make a pair, but I cheated. At the time I only had access to an imperial lathe, and no transposing gear, so I did away with the threads and cut a groove for an O-ring instead, so the cap was press-in.
I think they are still here on a bike somewhere, will see if I can find them.
