Sounds like you won't be N=1 for very long. I'm striving for N=3 at the moment, but have only had a max of 8.

Recently went to one bike for everything. A C6/7 fusion with bone graft, plate and 4 screws makes mt biking too risky. A bad screwup could put me in a wheelchair. Probably won't have the mobility for drop bars. Haven't been that flexible since I blew the disc anyway! Sold the Klein Quantum. Sold the FSR full sus. Sold the P15 Paramount(big mistake!).
Went with a Surly Cross Check. Ride everywhere! Ride to the store, ride down town, ride to the beach, explore backroads. It's supposed to be fun. Maybe not as fast as specialized bikes, but a great ride that goes anywhere I can. Like Grant Peterson's book, "Just Ride"!......

Thanks! If you’re of that state of mind, you need to read this book. Really like his approach.
Alternatively, read some of his articles on the Rivendell website.

BTW, Despite the the hype, the cross check feels uncannily like my p15. . Highly recommended! I was hovering over the button to order a Riv Homer H, When this came up. Mechanic owned, less than 300 documented miles. For 1/3 the price of the Riv. As much as I’d like to support the cause, didn’t want to spend $1200 difference!

I wound up with a Ridley by chance/Craigslist deal. So far so great!
I would definitely give consideration to a custom steel bike if I were looking to create my forever frame.
Weird thing about my Ridley- it’s marked a 48cm seat tube but rides taller than my Specialized did at 54? Granted, that bike had somewhat more compact geometry with a slightly lowered top tube but still. Guess tape measures work differently in Belgium

Noticed that also. My Paramount was a 21”. My Colnago a 52. The Cross Check is a 48, and it’s a great fit...

Jeff Jones on YouTube. Thanks for the heads up! I just today used the Rivendelle method to set seat height for my friend!

I am impressed with your downsizing your collection to just one bike - I've come close... and only really missed one (a 92' Cannondale M1000 that was a perfect fit commuter) when I've attempted to pare down my collection a bit.
I have to admit though I still have a weakness for the siren song that is a used, well made bicycle in my size .... that can be customized to my needs and blinged up a little. I have made huge strides in living simply in all other areas of my life - but still have a difficult time letting go of a few bikes. If someone comes along in need of a bicycle that I know would be perfect for their needs - then, I have no trouble letting it go - and have done so many times!
It's definitely psychological/personal/sentimental for me. I think a huge part of it is that I spent my first 2 decades of riding, on bicycles that were way too big for me. While the smaller sizes are still less common - the options in the used bicycle market are much greater.
I am currently shopping around for another bike... ... and I keep telling myself "well.... if you let go of 1 o2 of your other bikes.... then you can get one..."
like that's gonna happen!!

Right now (bad timing because I JUST finished my Ridley) I am actually a little obsessed with the JONES LWB bike.
This looks like a LEGIT contender for being the final-word in end-all, be all bikes, once you get past the aesthetics.
