Touring Shoes? Any thoughts?

Check out Keene Springwaters. They are comfortable off the bike, while on the bike will keep your feet protected and dry. No need for booties.

I'm a huge fan of Sidi Dominators, they are super comfy for me and so easy to adjust while you're on the bike. On my last 1 month tour I took some old cheap Specialized M160 shoes and they were perfectly comfy too. My advice - buy your shoes locally so you can try them on! The best shoes for you are the ones that feel the best, period. Comfy feet are just super duper critical! Never sacrifice fancy features for comfort in this area.

+1 on the Sidi Dominators, with a caveat. They're great for walking into stores, restaurants, libraries, and even motels. You'll wear the soles out if you have to walk too many hills (like eastern Kentucky on the TransAm. Alas.

I've been wearing this similar shoe on my commutes: Shimano SH-MT22 MTB Shoes
I switched the laces out for Yankz and have been pretty pleased with them.

there are a few Spud sole, less-lugged sole shoes made..
the ones made for cycling , without a pedal system in mind
are so 90's. or before.. those are rare..
My favorite Touring shoes were heavily modified over a few years,
to create a wide, across the shoe, hour glass like cleat,
to use my <C>toeclip pedals, and
inside I have comfortable insoles , in my case, Birkenstock, 3/4 length.
they fit rather loosely , but that is probably part of the ride for months comfort.
the ones made for cycling , without a pedal system in mind
