What color bar tape and brake housing?
I think I want something a little flashy. I kinda like yellow or lime green.

Red Fizik perforated faux leather might look good.

Paint looks grey-ish; grey and lime green compliment each other well.

If you want something kind of wild & flashy, maybe the Serfas "woven" patterns. Something like this might compliment the white decals and blue-gray paint:

A light green, light sky blue, light pink, all would work well and be more interesting than plain white.
If you can find ivory (off-white), that could be sweet, with grey housing.

Flashy would include Newbaum's cotton bar tape, Rustines gum hoods, brownwall tires and leather pedal clip straps.

Perfect timing. Today I found a scrap of the housing I used on my wife's Black Lightning. Gold!

I think a pink would go great with that frame color. Nothing crazy....a subtle pink if such a thing exists

I went with red Fizik on my blue Legnano, but stuck with blue for cable housing. I've seen housings in red, too, which look nice too, with a blue frame.
Similar blue Legnano with (dirty) red tape, white housings, because that's how I got it.

Usually the old blue Gios are equipped with white tape. But once I saw one with a red tape and a red saddle. It looked incredibly hot.

I think yellow or red would look awesome with your bike. My general preference is to contrast the "cool" blue-gray of the bike with a "warm" color.

Third vote for pink>
No pics right now, but I have a Rockhopper that same color with mild pink cables, toe straps and accents, and it looks fantastic.

Pink
Another vote for pink bar tape. I'd keep tires, cable housing, saddle black. PG

I would go with red. Any or all of the following:
Bar tape( Possibly red/ blk camo), red cable covers, Red bottle holder , and red saddle. Maybe even get red chain ring bolts.

I've decided to go with yellow. I have yellow bar tape and yellow brake lines on the way to go with black brake hoods

Continental Ultra Sport II makes a lovely yellow tyre that'd suit that perfectly, and they're not terribly expensive either.

Personally, I think that the bright cable casings and bar tape do not match in color. Both yellow, true, but different enough to be noticed. To that add the the yellows stand (leap) out, detracting from the overall presentation of the bike. Sorry to be negative but I feel rather strongly about this.
Flash is cool, or at least used to be for me...
But coordinated components and accessories moves the bike from flashy to elegant, allowing the viewer to see the bicycle first, then begin picking out the different details and features. In my mind, anything that instantly demands attention, is a detraction from what I am hoping to achieve, when I build to suit me...
Restoration, of course, is a completely different issue and I don't mind a bit of "bling" when it original issue...

Seatpost is so low, I'm surprised you can straddle the top tube flat footed.
