Swapping cog combinations on cassette- derailleur adjustment?

I have two dumb questions.

I bought a new set of (carbon) wheels which I intend to swap with my existing conventional alloy rims, depending on the ride and conditions. I figure I should have the same cassette on each to make swapping as easy as possible, but my go-to standard cassette - a Shimano 10 speed 12-27 - is getting harder to find.

Question 1. Will a SRAM 10 speed 12-27 work equally well? i've read that in most cases SRAM and Shimano cassettes are interchangeable, but that this is not always so for 10 speed varieties.

Question 2. If one of the wheels instead has a different cog combination - say 11-25 or 11-28, will the shifting be screwed up without having to do a major derailleur tweak each time I swap?

I have used 10spd SRAM 11-28 cassettes on a 9-10 Shimano hub without difficulties. This was on a bike originally 9spd 12-27 Shimano cassettes.
Shifting will be minimally affected by small cog variations such as you mention assuming chain length is optimal for the 12-27.
OTOH a new cassette and older chain say 2000+ miles may disagree with each other YMMV.

It should work fine. The RD adjustment is only to fine tune the tiny difference in how the cassette sits on the hub body from wheel to wheel.

As @caloso noted, you will need a tiny RD tweak each time you swap wheels no matter what cassette you use because of tolerances - even the exact same model of wheel will require a tiny tweak.

As @sch noted if your chain is the correct length for a 12-27; you should have no trouble with a 11/12/13/14 - 2x where 20<x<28.
