Wheel bearings
I have a 2009 Scott speedster s50 that I want to replace the wheel bearings on. How do I know what size I will need? Where is a good place to order from?

You start not with the make and model of the bike but rather with the make and model of the wheels, more specifically the hubs of those wheels. Bike manufacturers change component specs all the time. There is not even a guarantee that your bike has the original equipment wheels

Grade 25 balls are easy to find and better than you need, yet not much more costly than lower grades (lower grades have larger numbers). Hubs typically (but not exclusively) take 1/4" balls for the rear, and 3/16" in front. They don't make all kinds of in between sizes, so a simple eyeball/ruler measurement is OK to determine which.
Bearings themselves are a different story and you need to find the right spec.

I like keeping a variety of bearings in my tools available for bicycles. Amazon seems to have a variety pack, not sure what the odd ball sizes are for?

If they are cartridge bearings there should be a number etched into the side of the metal case or molded into the plastic grease seal.
Try Googling that; often replacements can be found in industrial supply stores at surprisingly low prices...
