WIDE CARBON RIM - 28 mm and 28c road tire
Hi,
I am building a titanium road bike.
I will not do competition but I like performance.
Maybe in a distant future I would do a but of gravel but that a big maybe (still prefer MTB to get dirty)
I am looking for a carbon disc wheelset that would fit with Continental Grand Prix 5000 28" | 700 x 28C
So far, I have found a wheelset with this rim dimensions (I will choose the 58mm deep) :

what is your price point? Do you want a top-end hub or are you willing to settle with a chinese brand?
21mm is pretty close to ideal for a 28mm GP5000. Wouldn’t recommend much more than that for practical reasons.

I ran 28mm GP5000s on a carbon rim with the same specs, it measured out to a lil over 30mm and rode beautifully, no issues.
If you're interested in maximizing the aero benefits of the 58mm deep profile, then I would run a 25mm GP5000 that would measure out to 27-28mm and be a better aero match for that profile.

I'll 2nd what smashndash said - that rim is an ideal size for the 28mm Cont. And note - most of the dimensions on that drawing pertain to the wheel design, aerodynamic profile, etc... The only measurement that matters for tire size and mounting is the ID of the rim - the dimension shown at 21mm. Older traditional rims were as narrow as 14mm, and newer generations are between 17mm & 21mm. That extra width has a significant amount of impact on the tire profile - making it wider, effecting a better contact patch and cornering contact patch, as well as making your ride smoother. And you did mention that you want performance riding - you'll get it with this combination with a generous dash of comfort.

Wider rims can make the tire wider as well in some cases. I was pleasantly surprised that when I installed a set of Conti Grand Prix 4 Seasons, size 28mm on an older rim where they were 27 and change, they became 31+ on a gravel rim that’s 23mm wide. That *might” be an issue if the frame isn’t designed to handle a 32mm tire.

I have Bontrager Aeolus Pro 5s with 19.5mm inside width rims. Conti 5000 25mm measure 27.64mm at 100 psig. Conti 4000 25mm measure 27.99mm at 105 psig.
For a comparison. Conti 5000 25 mm at 115 psi 25.63 mm on 14 mm rim. This was the original wheels on my old Madone. With the Aeolus wheels I have to run 23mm.
