I don't even know what flip it means and thats the frame that my LBS fit me on and on my first rides it feels very good, even though the seat looks like an elevator.

For racing you want the handlebars very low so you can have a flat back with your hands in the drops. If you flip the stem over it'll move the handlebars a LOT lower.
Judging by your seat height that might be waaay too low. But, if you already have the right wrench sizes it would be a fun afternoon trying it to see if you like it. Or you could just enjoy your new bike and ignore people on the internet .

I considered one of those F75's also. It was very light and fast, but I decided to go carbon for the comfort factor.

Isn't this considered Bike porn??? Okay..I ride a Giant...but rode a Cervelo a few weeks ago with Red Sram...it was THE BEST....re-thinking my bike..hmmm...time for a new one?
