Well, that's weird. I've been riding gravel for a while now, and I haven't bought any "gravel specific" clothing. Guess I must be doing it wrong.

I swear every "gravel" product advert has some variation of this guy in it. I love this one because it looks like they photoshopped in the beard, hat and flannel on a stock photo of a roadie.

The only thing missing from the lifestyle look is a reference to post ride alcohol drinking like a bottle opener where the front derailer would be.

Love this, but the price is steep. At $120 I'd be really tempted. I've got an REI/Co-op merino blend hoodie with rear pockets that I wear off the bike quite often (and for casual rides). Whenever I don't wear it, I miss those rear pockets and think that they should be on more of my clothes.

Everyone that I ride with on gravel wears road kits, and sometimes even aero helmets. 
Just me personally, but I would never consider wearing something baggy or with a hood, no matter the surface. As always, do what works for you.

I may be hopelessly out of touch and out of date here, but help me: isn't part of the reason for tight fitting cycling kit safety? (we all know about aero concerns).
Especially if I'm on a lumpy/bumpy surface, and I take a header, I imagine that having folds and flaps of fabric that are wrapped around my body parts, near my poor cartwheeling bicycle, may not go well for me?
Honest question.

Seriously, though, nothing being discussed is that flappy and I'm having a hard time seeing how there might be any kind of an issue. What exactly are you envisioning?

If I hit a pothole on a turn and go over the bars, I dont think itll matter much if I am wearing bibs or some MTB shorts.
I wear bibs and a jersey when riding(paved road or gravel road) because I dont see much difference between the two where I am, many rides are a mix of both surfaces, and the bibs are better than layers of shorts because there is less fabric shifting around my saddle and knees.
As long as I am not wearing a muumuu while I ride, I dont think I have to worry about 'folds and flaps of fabric that are wrapped around my body parts' when I fall.

I am aware of a friend's brother who had a bad accident when his seatpost snapped during a ride; the broken-off seatpost caught a loose shirt and caused greater injury.
I also am trying to take up mountain biking, and a friend at work is a former sponsored rider; he actually volunteered how he doesn't do "the baggy thing" and as a former desert-southwest rock climber, I would definitely describe his 'look' as dirt-baggy (I mean this in a nice way).
