For when you aren't ready to go custom - pressfit vs throughaxles
I'm putting together an allroads sort of bike. I want clearance for 700x45mm or 50mm tires, a high stack, a steel frame, tapered head tube and carbon fork, etc.
The challenge? Available frames require some compromise - for example a Salsa Vaya gets me close, though no rear TA on the carbon fork model (I can probably use a 10mm through bolt hub instead). OTOH, a RLT 9 Steel gets me TAs, but a press fit BB (I guess I can spring for a Chris King BB, but if I did that and it creaked anyway I might go insane).
I'd like sliding rear dropouts, too, but I don't think a frame currently exists with room for 50mm tires, throughaxles, tapered steerer/carbon fork, and a threaded BB.
So: What would you sacrifice? What's worse?

No sacrifice required.
Install a Praxis or Enduro Torqtite bottom bracket into the pressfit frame and you will never have a problem. They are not adapters but complete bottom brackets which negate the need to press anything into the frame. There will be no creaking and service is super simple.
I have the Torqtite. It took five minutes to install. The Praxis is similar but less expensive.

No help to you unless you can consider a complete bike, but Raleigh Stuntman has the features you're looking for. Alloy fork, though.

Why not go custom? You might pay a bit more out of the gate, but you will get exactly what you want.
I would expect most steel frames to have a threaded BB.

I have one of the bikes your considering (Vaya), but I didn't want a carbon fork, so I have quick release front and rear. What exactly is your worry about QR? I can see how it makes a difference for a suspension bike, but not this type of bike. The only annoyance I have is making sure the wheel is centered when installing. If you are just wanting the newest advancements, I understand that.
As options mentioned, there is also little worry about a press fit BB, but I have no experience there. I will lean toward a threaded BB if all else is equal though.

I dislike even the concept of press fit bottom brackets but Tim H seems to have a solution. Through axle, at least on the front, will be my essential, assuming disc brakes. I once had a mtb with early disc brakes and QR. What a pain adjusting the brake each time the wheel was installed.

this has thru axle, a variable chainstay, tapered carbon fork, threaded bb, is steel, and has a high stack height(I think so, at least).
another would be the Fairlight Secan in 'T' size. That has a higher stack height.
so if you meant just a tapered steerer, I guess the 1 thing I would give up on would be clearance for 50mm. The 2 bikes mentioned can clear 45mm, which you are good with.
