Sounds nice. Is there an easy way to modify an existing jersey to close? I'm thinking even Velcro would work but I'm not sure how to attach it so that it doesn't come off in the laundry.

Debating riding with an LTE Apple Watch instead, just to preserve the phone. I know a few guys who do that now.

This is thread should be more about the quality and design of jersey pockets for holding things. Deeper pockets and those with good elastic on the top will hold your phone.

This week during my cross race, some guy flipped over on a steep off camber switchback. Iphone went flying out, skittering across the course.

I just ordered the new iPhone XS Max...my first big phone. Last one was a 6 with no issues. Fingers crossed that the bigger one does not fly out. I really doubt it can.

You'll be fine with it in your pocket. It's too heavy to come out unless you're in a tumbling crash, and in that case, your phone is the last of your problems.
But if you survive the crash and are alone a working phone might be the start of getting help.

I buy flip phones small enough to fit inside one of those tri-folding wallets yo and get fro REI. Replace the narrow velcro on the wallet with a wider,more aggressive strip. With phone in a cloth wallet, the combination of the cloth and the bulk means it's never coming out either riding or in a crash. (And padded by the wallet, it will probably work even if that is an impact point.

Note to the OP. I engaged in some field testing yesterday. Practicing my CX mount and dismount, I hit an unseen hole in the grass and launched myself over the bars. iPhone, wallet, keys, and small tool kit all stayed secure in their respective jersey pockets despite a pretty impressive flight, rolling landing, and successful avoidance of my bike which was launched into the air.

I don't field test every post on bike forums, but I went the extra mile for you.

I lost my baggy with $, ID, etc. last weekend.

At the lunch stop, but maybe when I pulled the phone out to make a call near the ride end.

Would not have come out while riding IMO.

I've been using a Speck Grip case for my Samsung Galaxy S5. The back has rubber ridges so it won't slip out of my fingers if I pull it out of the jersey pocket while riding. And the rubber helps keep it in the pocket, too. The S5 is waterproof, so no ziplock is necessary. It's been maybe 18,000 miles with no mishaps. It goes in the middle of the three jersey pockets, by itself.

It won't slide if set on a car's dash or other sloped surface. I did drop it once, when removing the jersey with the phone still in the pocket. It landed on concrete on a corner, got a slight chip in the case, no other damage.

Recommended.

I see Speck has a similar CandyShell Grip iphone case in many color choices:
