Universal MTB flat pedal size?
I recently broke one of my pedals and am looking in buying a new ones. A lot of the pedals are universal and they don't show any dimensions, so does anyone know what the dimensions of a universal pedal are?

Do you mean size the platform of the pedal or the part that threads in to the crank?
Platform size is all over the place, but most threads are 9/16" x 20tpi

You're going to buy 1 pedal? They are sold in pairs for a reason, buy 2 that match. Cheap ones can be had for 30-50 $

Pedals typically are sold in pairs; being that the right pedal is left-hand threaded. Most pedals you will find are 9/16” size; that’s pretty much the standard. Some kids bikes and very, very inexpensive ones will have a 1/2” spindle, but that’s not as common.
For a budget upgrade, I like the plastic-bodied BMX pedals like the Animal 'Hamilton' or Odyssey 'Twisted'
Light-ish, decent grip, and serviceable bearings. You can find them all day long for $20, sometimes as low as $10, if you don't mind funky colors, although the plain black are good if you're trying to keep the bike low-key.

Bikes: A steel framed 26" off road tourer from a manufacturer who thinks they are cool. Giant Anthem. Trek 720 Multiroad pub bike. 10 kids bikes all under 20". Assorted waifs and unfinished projects.

Unless you have a cheap bike with a one piece cranks, all pedals are standard fitting.
Pick some pedals you like. Buy them.
Things that are nice to have:
Sealed bearings or a sealed pedal so water and dirt can't get into the bearings.
Grippy pins on a flat pedal.
Bigger platforms are usually more user friendly than small ones.
The Shimano PD-GR500 is a good example of a standard pedal with the above features
