Good to know. Thanks. Crystal used to be a full line jam and jelly company and other stuff too. I think the hot sauce may be all that is left. Used to be owned by the Baumer family. Don’t know now. But there is a big billboard along IH610 in New Orleans commemorating where the company used to be located.

Moderate jalapeños are wonderful. The flavor can be enjoyed alongside the heat. To much heat and you lose everything else. That is a shame.

Yessir. Peach, Chocolate, Georgia Flame, Fatali, etc. Mainly superhots in there. Mrs. LAJ found a pepper that she grew last year that has the flavor of a ghost, but not the heat. The first bite is unnerving if you've ever had the pleasure (!!) of eating a ghost. You know you just made a mistake, but the heat never comes.

She doesn't grow the superhots anymore, mainly because we have more than enough dehydrated hot to last us the rest of our life. Shi****o peppers, along with the ingredients for salsa, are in the garden this year.

What pepper would that be? My hot sauce buddy has mentioned that he likes the ghost flavor but is skeerd of the heat.
