I had been using the slip from slipsteam. They do two things. They cut down alot on wind noise because they create a spoiler of sorts in front of your ear. They also can hold an ear bud. With the wind noise greatly reduced you don't need to pump up the volume so much to hear what you are playing. That is especially nice if your speed varies alot. When I tried other alternatives I'd end up with the sound blaring too much when I stopped and too quiet when I got really going.

I know it's been a long time since I started this thread but I wanted to bring closure to it.
I found earbuds that stay in but don't require blocking outside sound. They are the Sony MDR-E10LP Earbuds.
I'm fond of the blue/teal ones, but it's not the color that matters, it's the in-ear-friendly shape. These work great for me!

I can't find the site damn it, but there is a guy who sells "wind deflectors". It's a pair of plastic strips shaped kind of like a wing or a spoiler that you attach to the helmet straps and they deflect some of the wind from hitting your ears. I know there are others, larger ones that cover most of your ears but these I saw before much smaller and were very unobtrusive.

cheap Philips earbuds and I only use the right side while cycling, even on a paved rail trail.
