Help me set up my front suspension

So I recently purchased a Manitou Mastodon Comp 120mm fork for my fat bike and had the bike shop help me set up the sag. With the LSC opened they inflated the fork to 150psi and it was still looking around 30~35+% sag at my weight (~360 lbs). I had to turn the LSC to fully locked out at which point it was actually getting the recommended sag of around 20%.

I guess what I wanted to know is does this seem fine for trail riding on the more aggressive side of things? I did some curb drops and stair rolls and it got close to bottoming out in the fully open setting with about 10-15mm left and when fully locked out there was about 20mm or more travel remaining. I don’t think I can add more air to the fork cause apparently the max psi is 120 and it’s already at 150...

You should be going after rebound first before the LSC. The dampers are also set up for a regular weight, not just the spring, so they're not keeping up with you. I'd go post in this thread on MTBR and see if you can find some help there, for starters. check this out too: https://www.shockcraft.co.nz/media/wy...p_guide_v0.pdf

There are a lot of other custom options like Avalanche if you're not happy what you can do on your own or at your shop.

you're at max pressure the seals can handle, time to play with the other settings. Running it in rebound XC setting should be stiffer and maybe hold weight better. All the way open will bottom the fork out sooner and fork travel will be slower. 30% sag in a 120 fork is fine.
