Fuji Del Rey 12 speed conversion to 2x7 speed STI?
Got a friend who wants me to convert a vintage Fuji Del Rey 12 speed with Fuji branded Suntour VX rear der and Suntour front der to STI shifting.
here is the plan:
Shimano Tourney STI lever set 2x7.
7 speed freewheel and chain
longer rear axle & spacer.
respace frame from 125mm to 130mm (done many frame respacings).
Will the Tourney 7 speed sti shifters work with the Suntour derailleurs?
The bike is in pretty good condition and it seems to have more sentimental value so it's worth it to the friend to do this. The bike appears to have very few miles on it. Probably from 1978-1982.

For 7 speed you won’t need to go to 130mm. 7 speed is 126mm.
You’ll need to change the derailleurs to Shimano. I’ve heard folklore of people being able to use a Suntour FD on a 2x, but buy a Shimano FD.
You’ll need to get new cables and housings.
You’ll need downtube boss cable stops.
Use a Hyperglide or Sach Aris freewheel.

If you "have to" spend the $ for shifters & DER's, you might as well go to 9/10 speed with a new FH rear wheel.
Of course, if you already have the parts and are doing it at minimal $, that makes sense too.
It's kind of a - if one more cog costs $XX.XX, how much more is 3-4 cogs?
Since you know how to cold set, which still isn't a bad idea even for 7 speed. Makes a much stronger wheel.

I have a V-Gt that I run with a modern Shimano FW (6-speed) and an 8-speed KMC chain. The modern chain and cog profiles do so much to improve shifting compared to the flat-sided 1970s OE, I don’t miss the indexing.
If if your friend just wants on-the-hoods shifting, you could explore using a Gevenalle style shifter, along with a modern FW and chain, would give good performance out of the original hardware.

Gevenalle is one of the brands, RetroShift is another, of a style of shift mount that lets you mount a DT or bar-end style shifter on a traditional brake lever. Similar in operation to a brifter, but without the ratchety bits. Developed for CX, because they’re simple and rugged, also with Adventure tourers, because you can use a friction lever to run MTB derailleurs that aren’t compatible with road shifters.

Has your friend tried Tourney STI? From what I remember, some of that cheap Shimano STI stuff can be pretty lousy to use. But that was years ago and my memory may be off.
How heavy is your friend? 7-speed freewheels are almost a guarantee for bent axles unless the rider is very light and careful, or the hub is specifically designed for such use (yours isn't). I'd recommend going all the way to an 8/9/10 speed rear cassette wheel which opens up a lot of options.
