The under mount water bottle is silly in my opinion. Maybe for road touring or something, but if I just had to bolt something down there, I don't think it would be a water bottle. Even on the road the bottle would get plastered with dead worms and crap.

On the DK100, all of my bottles got dusty, but my under-downtube mounted water bottle was so covered in filth that by the time I drank it I had to switch out the lid. I agree that location may be better for a toolbox or air pump.

I usually tape the nipple of the bottle down there with masking tape. It works quite well.

the 3rd water bottle is typically for fuel or a toolbox in touring.
It's also not nearly so dirty if you use long fenders with a mudflap on an actual road, as compared to a legendarily dirty ride with a distance several times what the average tourer does per day.

Many gravel bikes are moving to lower BB's for stability on loose surfaces and that can make cornering clearance more of an issue with big leans on tarmac.

Essentially, yes. The only question is the impact on ride height from the smaller tires and any geo changes in the new model that may make it less of a "road" bike.

I think both the Open UP and 3T Exploro is a good reference, from what I read, it's a killer on both surfaces

Alternatively, you could go the HTFU route and just drink out of the dirty bottle. Hasn't killed me yet.

What is that bolt or screw on the fork just above the black section?

I suspect it is part of the fender mount system. I thought it was rack related, but all the text I have read doesn't mention mounting a rack on the front (only the rear).

What I want to know is, what happened to this one? This pic just popped up today, but it matches none of the models on the Specialized site. Appears to be an E5 model (welds), Future Shock. I like the paint job better than anything on the site.

Generally this bike reeks of cost cutting compared to the previous gen. 10r to 9r frame, 2lbs heavier(!), lower spec wheels compared to previous gen at least among the top spec models I looked at, no more CG-R post.
Most of all this is now squarely a gravel bike, whereas the previous one perfectly straddled the line between road and gravel. I guess Spec has abandoned the type of bike they inspired Trek and Focus to build in the Domane SL/R and Paralane. Understandable since many wanted more tire clearance. Shame that now you have to choose between road and gravel with the Roubaix and Diverge. Their N=1 bike died after one gen.

That's the E5 Comp in black.
