Recommend black touring wheelset for Trek 720
Looking to upgrade a recently purchased 85 Trek 720 to 700c wheels but would like a pair aesthetically similar to the black anodized, or maybe they're considered dark gray(??), Matrix wheels that came on it. Complete wheelset/hub recommendations also. Willing to spend somewhere between a little and a lot.

Follow Craigslist and such sites for local wheel buys.
These were $75 - Sunshine ProAm hubs with Ambrosio Rims - in excellent condition, but no skewers. Learn tubulars, very affordable.
Cleaned on left, as received for rear
Black rims match black lugs

You can find Sun m13ii rims in black for around $40 shipped. I think they come in 27", 700c, and both 32h and 36h. I think they're an upgrade over the heavy Matrix rims and would work well with a 28mm tire. (Not sure about going with any wider tire on that rim.)

What spacing on the rear hub/cog size are you going to use? I might have some candidates depending on your answer.

Dark gray vintage clincher 13 mm inside (none have machined brake track): Mavic G-40, MA-40; or Wolber Aspin Alpine (see corrections below)
Black vintage clincher 13 mm inside (machined brake track): Mavic MA-3
Black modern clincher (machined brake track): Velocity A23 (18 mm inside), or Pacenti Forza (20).

The Aspins I have are tubies, did Wolber make both?
I also have a set of wheels with Matrix clinchers, that I'm not married to, if you're interested, where are you located? These are truly black anodized, (not dark bronze), as are my Roval tubulars.

If you want wheels you can actually tour on, I'd recommend the Mavic A319 or Rigida Sputnik, both of which can be bought in black. They are not light, but they will not break. I toured on a set of A319s laced to Shimano Deore hubs (which also come in black) for 3 months riding every day, and then commuted on them daily for the past 6 years. Still nothing wrong with them. A Rigida Sputnik is on the front of one of my tandems.
For the Sputnik you may have to order from the UK, Germany, or France. I've successfully gotten rims shipped free from someplace, I forget where. SJS, Bike24, Bike-Discount all come to mind. The A319 should be readily available in the USA.
For the rear, I'd not use a freewheel touring unless you use Phil Wood or other fat-axle hubs. Now, when you are buying new wheels, is the time to get a proper freehub so you can change broken spokes on the road and not worry about broken axles.
For the front, I'd consider a dynamo. Way easier to incorporate this now when buying new wheels. If you build your own wheel, it's only a few dollars extra and the benefits are enormous.
I will warn you the wheels I propose are not light, but you said "touring" so I give you touring.

I've put 700x37 on the m13ii rim, and it seemed to work fine, for what it's worth!

I think I have these... https://ambrosiowheels.com/en/rims/classics/excellence/
Modern width, so 130 mm. I've only had them for a few weeks, havent ridden them a lot. They are not that heavy but I had a set of fulcrum 5.5's on the bike before and yes, these are a tad more heavy. They look way better with these though. Rule of cool so to say.
You could pick up a more modern wheelset, with less spokes. Most seem to be black nowadays. But 28/32 spokes looks better on a classic :-)
Hope this helps.

I love my Mavic A719’s. put a good 130 cassette hub in the rear, (Phil, Velo Orange) and a front dyno hub and you have wheels for a lifetime.

I have a nice set of eight speed wheels, good hubs, good free hub, good machined braking surface, clincher 700c with skewers. Been meaning to take pictures and offer them in the For Sale forum.

I built a nice set of wheels with ultegra 6700 hubs and the dark grey mavic open pros. They survived a tour through the rockies and a lot of rough use on brevets. They can pass for a classic looking wheel from 6 feet away and haven't given me any trouble. Velomine has a lot of great deals on wheels, often a better price than buying rims and spokes on their own... this seems like a great deal, I paid more than that for just a pair of mavic rims, let alone the spokes and hubs. There were some 36 spoke mavic wheels but all the black ones are sold out, but there's an open pro/105 silver set left as of now. I didn't look in their touring wheel category but there might be some solid wheelsets there.
I toured on the vintage wheels that came with miyata 1000, they had suzue/sunshine hubs and I bent that axle; so I don't really have the inclination to use vintage wheels for touring when new cassette-based wheelsets are out there for such good prices compared to the price of building a vintage hub into a new rim.
