I think they're all equally good value, the question is if you want to pay more for the higher spec'ed Co-op bike. If you'll be doing much off road riding, the disc brakes are worth it, IMO.

The major difference is the REI has hydraulic brakes. Personally, I prefer the linear brakes on the Fuji when on long tours.
Hydraulic brakes I've heard are amazing but the same people said they have issues if the bike is left out all day (heat) and night (cold)

And they are indeed MUCH nicer than mechanicals. Not that mechs can't be good, I have a more than adequate set on my Mazama, but my cheap butt specifically paid a couple hundred bucks more for the fat bike to get to a model that had hydros over mechs.
