I have a couple backpacks and a lot of drybags for canoeing and kayaking that have a roll top closure, the roll top is quite dry. But I often pack my Ortliebs full enough hat I can only get two folds, to be really dry you should get three or four folds.

Yeah, in that case they'd definitely be a benefit. I can get mine rolled tight enough that they can trap air, I see no reason why they wouldn't work for such a use!
