Since hydroforming seems to be the norm is anyone building MTB frames? Seems like you can only make something old-school.

plenty of people build mtb frames. Old-school meaning round tubes, I guess, but it's not hard to build a modern geometry in steel. There aren't too many building full suspension mtb in steel, but there are a few.

I made a long low slack 29er hardtail with the Columbus Zona MTB tubes including the tapered HT. It rides great. Hydroforming is more often something you do with aluminium but steel MTBs are considered pretty sick with lots commercially available from the likes of Stanton and Cotic, including some full suspension.
