Stack of spacers
For an aluminium frame, what would the disadvantages of having a large stack of spacers to bring up the handlebars be? At around 3cm+ of spacers. Would it have a side affect of making the steering twitchy?

It should be fine. You can get one or two wide ones, if the "stack" is a concern.
The only other problem is that your fork's steering tube might not be long enough.
