Tektro 720's for the win! I came down going to the sun road with a set of them going 40mph+ in rain and sleet. No problems at all, had salmon Kool Stops in the back and just black Kool stops in the front. Properly setup canti's are a very nice setup.
Jealous if you get a BMC, I wanted to purchase one of the candy blue ones myself this year and waited too long. 56cm sold out...

Bummer you missed out. Personally, I finally went disc last year. I won't lie - it was a painful transition. The brakes I bought came with pre-soiled pads, so they didn't really work. Then I replaced them and had the lines shortened and the mechanic didn't quite tighten down the banjo bolt enough, so I lost brake line pressure and also ruined the new pads. Finally, I cleaned the rotors and caliper with brake cleaner, got new pads and did a full bleed and everything seems fine now. So disc brakes can introduce some new challenges. But I wouldn't buy a new rim brake gravel or cx bike.
If you ultimately do, though, your experience will be defined by the fore-aft stiffness of the frame and fork more than the brake type per se. If it's not very stiff, the bike will be prone to fork chatter and just won't feel as stable under hard braking. A stiffer platform really helps with these problems. Disc bikes pretty much need to be built with this level of stiffness in order to be structurally sound under braking, so this isn't really an issue with them.

I confess, I'm an idiot as well then.
Wife and I are the kind of cyclists who bought our first tandem to ride away from our wedding. It had cantis front and rear. We rode that bike up and down big long hills, ol mountains and passes, without a drum brake too, for many seasons.
Cantis do work, but there is a lot more to do, I think. It's not skill per-se, more like savvy. You have to empathize with the brakes. Hydraulic discs, you just don't have to think as much or anticipate as much as one used to.
To this day I ride a few old bikes with disc brakes up front and V or cantilever brakes in the rear.
