There were a lot more people on the start list; do they have to the option of skipping it and just doing the RR / Crit? Or is the list truncated?

That just looks like page 1 results. Before the server crashed, you could see all the results across multiple pdf pages.

Got to finish each stage to do the next.
Generally an Omnium allows you to pick and choose.

What's with the 35+ field? I expected much more. Do most of the stronger guys just do the 2's or 1's?

Yes. Its the same with junior 17-18 in popular venues. The strongest 35+ (and 40+) go do the categories.
There was a BIG deal that SoCal was talking about eliminating the 35+ as turnout was kinda low and 35 year olds are really still kids. This was a bit of an issue last year with juniors as they were in the 2s, 3s and the juniors.

It would be easy to eliminate the 15-16, 17-18, 35, 40s and start at 45+, but as the money comes from the masters that like doing 2-3 races a day - I doubt that will happen.

I'll captain the loser boat.

normally I'd try to get psyched about attacking and riding the rr like a maniac, but my throat hurts so badly it's hard to convey how much breathing hard does not sound like a thing that's worth it.

BF honor is at stake. Suck it up and soldier on. Do you know how much sand, salt, and calcium chloride I've been inhaling for the past two weeks? You can do this.

I think some of the speeds are wonky. They have the Jrs at 22 mph, the 3's at 32+mph, the 4's at 31+mph, cat 4 women at 27+mph, and so on.

Coach did 55+ and said was his fastest race ever (30+ years) at 31 something (not looking).

I am looking at some Strava lap times and they do not jive with those 30+ numbers.
