27" to 700c Conversions- Wheel Sets?

I'm converting an old Schwinn le tour luxe and I don't really know where to start in looking for a solid 700c 6-speed set. The bike will be mostly a comfort/light touring bike in the end. Hoping some of you guys had some recommendations for me.

There is a nice 700c Mavic MA40 rim and Campy high flange hub set on the sales section of this forum. I have two of these wheelsets, and they are a fine set-up, rolls well and nearly bulletproof. Hard to find better hubs than Camoagnolo, and Mavic rim quality is well known.

Google 'Wheelmaster', unless you want to spend big bucks; Wheelmaster has a nice assortment, various rim widths, etc. They actually cost less than separate piece parts required for a build. They arrive well trued and tensioned. But I like to loosen spokes to lube nipple threads and seats as I believe they build dry.

Tough to beat this wheelset from Velomine at $125 the pair built around Sun CR 18 rims. Those are solid rims and Velomine is a good company.

Is this your only bike? Only bike with six speed? Only bike that will be 700c? I always advocate trying before spending. If you have a set of 700c wheels that work in the bike try them out and see if you like the bike and how it handles with the 700 V 27".

Would this wheelset be compatible with your other bikes? I like to keep things simple. If all your other bikes are 7+ speed buy a wheelset you can use on those too, and then just go to 7spd on this project.
