Recommendations for $1500 Cross bike with discs

Recommendations for $1500 Cross bike with discs
My Fantom Cross Pro is showing some wear. It's gonna need a new drivetrain, cabling, and tires this winter, and I've been jonesing for a cross bike with disc brakes and converting tubeless, so thinking instead of putting $500 into it, considering spending about $1500ish on a new bike. Willing to transfer over parts that work, but not insistent on that. Really happy with what I got out of the Fantom Cross for ~$800 6 or so years ago.
I'm 5'6" and 145lbs on a 54cm frame and really enjoy the geometry other than my knee smacking the stem when out of the saddle. The main purpose is for a gravel grinder; fire road climbs and descents and pavement just as long as needed to get to the gravel. I enjoy taking it onto some easier singletrack from time to time. Used to race cross, may get back into that if I can get back in shape to not be last...
Preference is to go either a Steel or Ti route. MTB and road bikes are both carbon.
Currently looking at the Salsa Vaya, or Motobecane Fantom Cross Pro Ti. Also intrigued by the Surly Straggler 650b but hate the look of a curved fork. Anything else I should be looking at? The On-one pickenflick looks nice, too.

The Motobecane meets all of the listed criteria, it will be hard to find a better deal unless you consider aluminum.

I just picked up a 2017 Giant AnyRoad 1. I really like it. It's a good price and they changed the seatpost clamp to take a normal rack.

Have almost 9,000 miles now on my Fantom Cross Pro Ti.
I'd get another one is something happened to this one.

Take a look at the Niner RLT 9 1 Star for $1500. I've got the 4 Star build and absolutely love the bike.

Kona Rove Steel gets pretty good reviews, but I don't have personal experience with it. The Kona Sutra is basically the same bike with a beefier fork and I think it's above your budget, but the framesets are like $500-600 I think.
