Is there an option to manually enter a circumference?

Uh, yes there is... look at step three in your manual... https://cateye.com/images/manual/CC-MC100W_ENG_v4.pdf

There they allow you to manually put in any circumference you want. They show you the most popular sizes, but apparently allow a range from about 100 to 3999 mm. If your tire size isn't in their table... simply fill your tires to the proper inflation, mark a spot on the floor, move your tire fill valve to that spot (helps to have a friend), then sit on the bike, tip toe it forward until the valve is down again... mark this spot. Measure the distance in mm. Bingo... your calibration.

You are welcome.

I downloaded the .PDF file for the instruction manual. I see what you are saying about it not having the 27.5

All I can suggest is setting it up for the closest to your wheel.
