Wish I'd read this thread before I bought my 5000s. I've been running 4K2S in 28mm, which of course are really 31mm. So I bought the same in 5K. Bummer. Now I have 2 tires a bit undersized for my purpose to wear out! Shouldn't take all that long, though. Then I can get the 32mm.

I just mounted GP 5000's in 700x32. I absolutely love them on road rides. They feel as fast and light but also float beautifully. I have no reason to ever go to a skinnier tire with these. I'm not too worried on wear as I split time between these and gravel tires they might see 1500km's this year.
