The early 1Xs used 1/8" chain. All of them. (True, the term that described that system was still 80 years away.) The early geared racing bikes. 2 and then 3 cogs in back, a single ring in front. Since everything was built to 1/8" drivechain standards, throwing chains wasn't an issue. Look at the geared Tour de France bikes of the mid 1930s. (Also check out their way-ahead-of-the-times gravel wheels, tires and frames.)

I saw a few cheap Italian multigear bikes from the 60's pass through the shop for service, 1/8" chains.

The problem of throwing chains on a 1x mostly occurs when attempting to use modern chainrings purely intended for 2x. The modern rings have gates built into them designed to make it easier for the chain to leave the ring and move to the other ring.
It's a vintage bike. Use a vintage ring. When all the teeth are cut the same (no shift gates) problems are unlikely to occur. You also need to have good chainline. Using extra-wide cassettes that did not occur in the vintage era could cause problems too. Vintage chain guides are extremely rare because it was extremely rare to have a problem. CX guides are only needed if racing CX.

I built a Nishiki 1x8 years ago..... commuting and utility mostly flat, nothing radical I have never thrown a chain
deore rear derailrs, sram 12x 32 IIRC, campy crank with 39, cheapie thumb shifters
just works,
have to dig up picture later....because photobucket is now charging for every thing
