If supple is king, why FMB offer stiff sidewalls?

If supple tubies are the sweetest CX tires, to make the low pressures into a thing of beauty, then why is FMB offering some of their worldclass tires with stiff sidewalls so they don't fold at low pressures? ...Maybe it's to allow crazy-low psi? So that a 15psi tire acts like a 25psi tire? I still don't get it... (I found a somewhat old blog post reviewing and comparing Dugast and FMB supersweet tires.)
