What are the eyes...? I would use old headset lock nuts if I were crafting such a piece!
Problem with that is finding the used leather saddle at a reasonable price that you don't care if it goes on the wall!

Speaking of cutting the bars in half, I once found an old French bike at the dump.
Started to tear it down, and found the two halves of the bars were simply clamped in the stem.
I had visions of someone having difficult threading the bars through the stem, and finding this "solution."

Not mine so I don't know about the eyes, but I like your idea. I plan to make one for my garage/bike shop soon, and know that almost any saddle will work... though the leather one does add a nice touch of realism.
