What saddle are you rocking?
I'm looking at saddles for the Cannondale I'm building, but I can't tell what I'm going to like. I have a B17 on my commuter, but obviously I can't default to a Brooks if I'm going to get it dirty. but most of the MTB saddles I'm looking at look either bulky and awkward or hard and unforgiving. So, what saddles are best for XC riding and why?

WTB Silverado Pro...best saddle in all the lands. As for why, well for me it absolutely works, never been sore, chafed or had my undercarriage molested, the sucker just works all day long. Falls in your "hard and unforgiving" category I suppose but it's not as severe as your description.. cost about 90-bones or so for the non-Ti (NiCro) railed version. I've never found a "need" for titanium seat rails myself...

Syncros FR. Tough enough for DH punishment; yet, strangely, all-day comfortable. Have three in various states of abuse and they are still treating me well.

I recently searched threads in this forum and the vast majority seemed to like the WTB Speed V, so I went with it and am quite happy. Wheel World sells oem versions of it for $30 or you can get lighter versions for more.

I use a b17 on my road bike and was thinking of getting one for my new mtb but probably like the OP I'm kind of worried about water damage to the saddle. I've read they will blister from water damage

Maybe, but I sweat so bad regardless of whether I'm on the road or mtn bike, i don't think it matters. I have one on my commuter and have no problem riding in the rain. I just make sure that the bike isn't left out in the rain. It's always stored indoors. An even if it does get a bit messed up after a while, synthetic seats are at least as expensive and their materials wear through pretty quickly. I would just pay a little more attention to patting it dry when you are done and you should be good to go.

Velo Pronto on my new KHS fs build (it's a cheapy but works) and a Felt OEM saddle on my Felt ht. Actually for a stock saddle that came with the bike the Felt's is rather comfortable.

I have 2 wtb speed v's. One on a rigid 29er and one on a ht 26. they are super durable and a little squishy but I dont mind it. They arent as bad as everyone says. They are fine. I havent tried anything else though.

Mainly Flites on my bikes with the exception of two which have WTB Rocket Vs. I wanted to try out a new saddle, which is always a crapshoot, back in '03. It fit well and was comfortable. My latest complete bike purchase came with a Rocket V so no need to toss and upgrade.

Specialized Toupe 143 ti looks unforgiving but is the very opposite, im not entirely sure if its a mountain seat or not i think its a roadie seat but it fits my butt good n proper.
