I was riding my bike at lunch today and thought about this thread. I think a lot us grew in bmx bikes and you hand to stand up. You can't really do much on bmx bike sitting down.
While riding my bike today I noticed I did not like standing up on my cross/hybred bike doing about 15 mph. I only liked standing up while going up hill or sprinting. It felt awkward to pedal standing up with low resistance on the pedals. Maybe just because I have not ridden a bikes since 1990 and need more practice. dunno.

I doubt I've ever ridden standing up on a well-fitted hybrid cruising steady at 15 mph. If I'm going somewhat faster I might, just to change the position of my legs for a short respite.

I think coasting while standing is different (easier) for some than pedaling out of the saddle.
Either way, though I think wider bars help, particularly in the latter situation.
I have no problems in either situation, but I do find hammering out of the saddle more stable with wider bars.
